Heat the olive oil in a large pot over medium heat. Add onions and garlic, sauté until soft.
Add carrots, celery, and cabbage. Cook for 5 minutes until they begin to soften.
Add red beans, diced tomatoes, paprika, salt, and pepper. Stir well.
Pour in vegetable or chicken broth, bring to a gentle boil.
Reduce heat, cover, and simmer for 30-40 minutes.
Serve hot, garnished with fresh parsley.
