Ingredients

  • 1 cup red beans soaked overnight
  • 4 cups cabbage finely chopped
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 carrot sliced
  • 2 celery stalks chopped
  • 1 can can of diced tomatoes
  • 6 cups of vegetable or chicken broth
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  • Heat the olive oil in a large pot over medium heat. Add onions and garlic, sauté until soft.
  • Add carrots, celery, and cabbage. Cook for 5 minutes until they begin to soften.
  • Add red beans, diced tomatoes, paprika, salt, and pepper. Stir well.
  • Pour in vegetable or chicken broth, bring to a gentle boil.
  • Reduce heat, cover, and simmer for 30-40 minutes.
  • Serve hot, garnished with fresh parsley.
