  • 1 cup creamy peanut butter unsweetened is preferred
  • 1 cup rolled oats
  • ½ cup dark chocolate chips
  • ½ cup semi-sweet chocolate chips
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • A pinch of salt

Instructions

  • Preheat your oven to 350°F (180°C) and line your baking sheets with parchment paper.
  • In a mixing bowl, combine peanut butter, granulated sugar, brown sugar, egg, and vanilla extract. Mix until smooth and creamy, using an electric mixer or a wooden spoon.
  • Gradually add oats, baking soda, and a pinch of salt. Continue mixing until the dough comes together.
  • Gently fold in the dark and semi-sweet chocolate chips until the mixture is evenly combined.
  • Scoop out portions of dough onto the prepared baking sheets, leaving some space between each cookie.
