Instructions

  • In another bowl, whisk brown sugar, buttermilk, melted butter, egg, and vanilla extract until well combined.
  • Gently fold the wet ingredients into the dry mixture using a silicone spatula. A few lumps are okay; don't overmix.
  • Fold in the chopped apples, distributing them evenly in the batter.
  • Fill each muffin cup about ¾ full with the batter.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Let the muffins cool in the tin for a few minutes, then transfer them to a wire rack to cool further.
