Ingredients

  • 1 cup semi-sweet chocolate chips
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • ¼ cup cocoa powder
  • ¼ teaspoon salt
  • ¼ teaspoon peppermint extract
  • 1 cup white chocolate chips
  • Candy cane sprinkles

Instructions

  • Preheat your oven to 350°F (175°C) and line your mini muffin tin with parchment paper.
  • Melt the semi-sweet chocolate chips and butter in a microwave-safe bowl, stirring in 20-second intervals until smooth.
  • Whisk together sugar, eggs, and vanilla in another bowl until well combined.
  • Combine the melted chocolate mixture with the sugar and egg mixture, stirring until smooth.
  • Gently fold in flour, cocoa powder, salt, and peppermint extract until just combined.
  • Fill each mini muffin cup 3/4 full with the brownie batter.
  • Bake for 12-15 minutes until the tops are set, and a toothpick comes out with a few moist crumbs.
  • Allow the brownie bites to cool in the tin for a few minutes, then transfer them to a cooling rack.
  • Melt the white chocolate chips and drizzle or pipe over the brownie bites. Immediately sprinkle with candy cane bits.
