Preheat your oven to 375°F (190°C).
Core the apples using an apple corer or a small paring knife, leaving about 1/2 inch at the bottom to create a well for the filling.
In a mixing bowl, combine the dried cranberries, honey or maple syrup, ground cinnamon, and ground nutmeg.
Stuff each apple with the cranberry mixture, pressing down gently.
Place the stuffed apples in a baking dish or oven-safe skillet.
Dot the tops of the apples with small pieces of butter.
Pour water or apple juice into the bottom of the baking dish to create a liquid base.
Cover the baking dish with aluminum foil or an oven-safe lid.
Bake in the preheated oven for about 25-30 minutes or until the apples are tender.
Remove the foil or lid and bake for an additional 5-7 minutes to allow the tops to caramelize slightly.
Remove from the oven and let cool for a few minutes before serving.
